The other reason is that there are many other lights in the room or sunlight coming into the room and washout your screen slightly and may reduce the contrast between the background and the text. So take adequate precautions to close all doors and switchoff all lights that fall on your presentation screen to avoid this.
Unless you need to use brightly coloured text, do not use. I normally use black text on white screen for day when presenting in an open spalce for audience.
I use a dark background and often black or dark blue background and I use text colour as white or Light Beige for the best effect inside a closed space like a room or an auditorium.

And you should see that you do not use more than two or three colours in the gradient text as othewise the emphasis of the text will be lost.
